GF* Banana Bread

Servings: 1 Loaf


  • 1 3/4 Cups Gluten Free Flour
  • 3/4 Cup Coconut Sugar or Pure Cane White
  • 2 Tsp. Baking Powder
  • 1/2 Tsp. Baking Soda
  • 1/2 Tsp. Salt
  • 1/2 Cup Vegetable Oil
  • 1 Cup Mashed Ripe Bananas
  • 2 Eggs
  • 1 Cup Chopped Walnuts


Grease one 8 x 4 loaf pan & preheat the oven to 325 degrees. Sift together the dry ingredients; flour, baking soda, baking powder and salt. In a separate bowl mix together, sugar, eggs and oil. Begin folding the dry ingredients into the sugar mixture. Do not over mix, fold slowly and as little as possible to mix, or the bread will not rise. Once the mixture is about 75% mixed, add the banana and chopped nuts, continue folding until mixed. Pour into pans. Bake for 1 hour or until a tester comes out clean. It shouldn't take any longer then 1 hour. Let cool and enjoy!  like to cheat... I take a slice right out of the center before it cools and add butter!
